Spring Rolls Served with Peanut Sauce

This is definitely my all-time favorite! It’s traditionally served with peanut sauce but it’s tasty with my preference, soy sauce, too. These Vietnamese spring rolls usually consist of pork, mint, chives, rice noodles, lettuce, and shrimp. Here, we substituted the pork with marinated chicken and it was just as delicious. I prefer to eat them without the mint and chives too. Slice them diagonally in half for a nice appetizer dish for your guests or set up family-style with plates holding different ingredients and let guests wrap their own. It’s fresh, light, and OH-SO-EASY to make!
