Coconut Shrimp w/ Sauteed Peas & Rice


I used a recipe from Food Network’s Rachael Ray for the coconut shrimp and Barefoot Contessa for the sauteed peas. After I got used to coating the shrimp with coconut, it was pretty easy! Enjoy with a side of rice and you have a complete meal. =)

  1. How funny! This is actually one of my family’s favorite recipes. We make that and the chicken satay with jasmine rice for large dinners (the link is even on the same page as the coconut shrimp recipe!) Then the seafood lovers and the chicken lovers are all happy. We always double the amount of the peanut sauce because there doesn’t ever seem to be quite enough for everybody.
